Weekend Blues

 whenever i am feeling blue, i bake. this weekend alone i made cupcakes & chocolate chip cookies (which in case you didn’t know, i make the BEST)! i also feel the need to eat all of the baked goods. i must have packed on 3 pounds this weekend. Orion has been sick since last week wednesday. we have been cooped up in the house since then, luckily we have a wonderful yard, so we could go outside and yesterday i got to practice a bit of yoga. although we were confined to our property, i seemed to get a lot of thinking and digressing done. i have decided to continue this blog, yet instead of confining myself to this being a blog about fashion, i have decided to let it flow. i feel that if i let it flow, it will come naturally and take on a face of its own. i decided that way, i will blog more and will be able to create more. so, back to the cookies, these turned out alright, not the best (due to my lack of crisco). yet, they are all gone and i made them friday (mind you i gave 3 away). well for your pleasure i will leave the recipe below. enjoy!

 3/4 cup crisco all vegetable shortening sticks
1 1/4 firmly packed brown sugar
2 tbsps milk
1 tbsp pure vanilla extract
1 large egg
1 3/4 cups unbleached all purpose flour
1 tsp salt
3/4 tsp baking soda
1 (6oz.) pkg. semi-sweet chocolate chips
heat oven to 375*F. Beat shortening and brown sugar in large bowl with a mixer until light and fluffy. beat in milk, vanilla and egg. Stir in flour, salt and baking soda. blend in chocolate chips. drop by rounded tablespoonfuls 2 -inches apart onto ungreased cookie sheets. bake 9 minutes for chewing cookies or 13 minutes for crisp cookies. cool 2 minutes in cookie sheet. transfer cookies to cooling rack.
makes 3 dozen cookies

what’s for dinner

Usually I am extremely creative when it comes to dinner. But tonight my son is in the mood for pancakes. It was actually my idea after reading him–Curious george makes Pancakes. It seemed that we hadn’t had our weekly dose of pancakes and after the rough week I have had, this meal seems to take precedent over any of my other elaborate meal plans. The recipe I use for pancakes is as follows:

  1. Buy Kodiak flapjack mix. (the best! worth the price tag)
  2. Mix with cheaper pancake mix, we use Krusteaz. Equal proportions 1/2c each for 6 flapjacks.
  3. Stir in water 1/2 c. to 3/4 c. (depending on how thick you want your flapjacks.)
  4. Heat griddle with organic butter on medium-low heat
  5. Test to see if griddle is ready by dropping water on griddle, if water beads off, it is ready
  6. Pour about 1 1/2 tbsp of batter on griddle
  7. Add fruit , we like to use blueberries or bananas.
  8. When batter starts to bubble, flip.
  9. Cook for another 2 minutes, remove and set on plate.
  10. Repeat steps 6-9 until all batter is cooked.

Tonight we will have scrambled eggs and turkey bacon to compliment our meal. Pictures to come soon.
